This is another one of my grandmother's recipes, and my sister's favorite meal. It is classic comfort food sure to fill your belly on a cold day, or great for whipping up when you've got a crowd to feed. The mashed potatoes take a little time, but the end result is completely worth it. Alternatively, you can use leftover mashed potatoes from another meal. This casserole takes few ingredients, most of which you'll likely have on hand.
First, you'll need to brown some ground beef and onion.
Meanwhile, boil some potatoes. These ones are peeled because my mom hates potato skins and I was cooking for her, but if it were up to me, I'd leave the skins on. They add flavor and texture and contain vitamins and fiber.
Drain the ground beef and add a whole jar of Ragu Cheese Sauce. Shh, don't tell anyone I cheated and didn't make my own cheese sauce!
Mash the potatoes with butter and sour cream, then layer the beef and mashed potatoes in a 9x13 glass casserole dish. Cover with foil and bake at 350 for 15 minutes; then remove the foil and bake an additional 15 minutes.
It will get all bubbly and melt around the edges, like this, and your kitchen will smell just like grandma's. Talk about comfort food!
